Whey Protein (Sports Grade)

Whey Protein (Sports Grade)

Bovine milk whey protein · WPC 80 and WPI 90, protein by N x 6.38

Sports-grade bovine whey protein as WPC 80 (80-82% protein) or WPI 90 (90% min, dry basis). Instantised, high leucine and BCAA, full amino profile. Contains MILK; soy if lecithinated.

Specifications

IdentityWhey protein from bovine milk, spray-dried powder. Supplied as whey protein concentrate 80 or whey protein isolate 90. Protein = Kjeldahl N x 6.38.
WPC 80 typical compositionProtein 80.0-82.0%, fat 4.0-8.0%, lactose 4.0-8.0%, ash 3.0-4.0%, moisture 3.5-4.5% (US Dairy Export Council trade specification).
WPI 90 typical compositionProtein 90% minimum on a dry basis, fat <=1.0%, lactose <=1.0%, ash <=3.0%, moisture <=5.0%. Filtered a second time to strip fat and lactose.
Process routeWPC by ultrafiltration and diafiltration. WPI by cross-flow microfiltration or ion exchange; ion exchange gives higher protein but alters the native fraction.
Leucine and BCAA9.27 g leucine/100 g in WPC and 9.91 g/100 g in WPI as analysed (Mathai 2017), about 11.6-11.9 g leucine and 24-25 g BCAA per 100 g protein.
Protein qualityDIAAS 133 (WPC) and 125 (WPI) on the over-3-years/adult reference pattern, pig ileal basis - Mathai, Liu & Stein, Br J Nutr 2017;117:490-499.
Serving arithmetic30 g of WPC 80 gives about 24 g protein and 2.8 g leucine, inside the ISSN 20-40 g protein and 700-3000 mg leucine per-dose window.
Physical propertiesInstantised with soya or sunflower lecithin up to about 1.5%; nitrogen solubility index typically >=98%; pH 6.2-7.0 at 10% solution; bulk density 0.35-0.55 g/mL.
MicrobiologyTotal plate count <=10,000-30,000 cfu/g; coliforms <10 cfu/g; yeast and mould <=50 cfu/g; E. coli absent/g; Salmonella and Listeria absent/25 g; S. aureus <10 cfu/g.
Heavy metals and purityLead <=0.5, arsenic <=0.5, cadmium <=0.2, mercury <=0.05 mg/kg; melamine, nitrate and antibiotic residue screening available on request.
Allergen statusContains MILK. SOY declared where soya lecithin is used for instantising - sunflower lecithin available. No egg, fish, crustacean, sesame, nut or gluten input.
Lactose and diet statusLactose 4-8% in WPC 80, <=1% in WPI 90. Bovine dairy, so not vegan; vegetarian only where the parent whey used microbial or FPC chymosin, not animal rennet.
Origin and documentationCountry of dairy origin (US, EU, New Zealand or India) declared per lot, with veterinary health certificate, CoA, allergen statement and flow chart.
Shelf life18-24 months from manufacture, unopened, below 25 C and 60% RH, away from strong odours.

Whey Protein (Sports Grade) is the dairy protein that anchors most sports nutrition ranges, supplied by Thovek in the two commercial grades that matter to formulators. Whey protein concentrate 80 runs 80-82% protein with 4-8% fat, 4-8% lactose, 3-4% ash and 3.5-4.5% moisture on the widely used US dairy trade specification; whey protein isolate 90 is filtered further to at least 90% protein on a dry basis with fat and lactose typically at or below 1%. WPC is produced by ultrafiltration and diafiltration of liquid whey; WPI by cross-flow microfiltration or ion exchange, the latter giving the highest protein and lowest fat but a different native-fraction and glycomacropeptide profile. Protein is reported as Kjeldahl nitrogen multiplied by the dairy factor 6.38, not 6.25 - a small detail that changes the number on your label. The amino acid profile is what buyers pay for. In the University of Illinois dataset published by Mathai, Liu and Stein (British Journal of Nutrition 2017;117:490-499), whey protein concentrate analysed 9.27 g leucine per 100 g as-fed and whey protein isolate 9.91 g, which works out to roughly 11.6-11.9 g of leucine and about 24-25 g of total branched-chain amino acids per 100 g of protein. On the same study's pig ileal digestibility data, DIAAS scored 133 for the concentrate and 125 for the isolate against the reference pattern for children over three years, adolescents and adults. In practical terms a 30 g scoop of WPC 80 delivers roughly 24 g of protein carrying about 2.8 g of leucine, which sits inside the 20-40 g protein and 700-3000 mg leucine per-dose window set out in the ISSN protein and exercise position stand. Where the finished food is at least a source of protein under Regulation 1924/2006, the muscle-mass and bone claims authorised by Regulation 432/2012 become available to the brand owner on the usual conditions. Allergen and diet declarations travel with the material and must be got right. Every grade contains MILK. Instantised whey is normally agglomerated with soya lecithin, which triggers a SOY declaration - ask for sunflower-lecithin instantising if your market or customer will not accept soy. Lactose runs 4-8% in WPC 80 but at or below 1% in WPI 90, which is the usual reason buyers pay the isolate premium. The material is bovine dairy, so it is not vegan, and it is vegetarian only where the parent cheese whey was produced with microbial or fermentation-produced chymosin rather than animal rennet; we confirm the rennet source in writing per lot. There is no egg, fish, crustacean, sesame, nut or gluten input. Country of dairy origin - typically United States, EU, New Zealand or India - is declared per lot, as several destinations set import conditions on dairy origin and require a veterinary health certificate.
