Ascorbic acid (C6H8O6, molecular weight 176.12) is water-soluble and acts as a reducing agent in the aqueous phase, and is also the cofactor that allows prolyl and lysyl hydroxylases to convert procollagen into stable triple-helical collagen. dl-alpha-Tocopheryl acetate (C31H52O3, molecular weight 472.7) is lipid-soluble and contributes to the protection of membrane lipids from oxidative damage.
