Resistant wheat dextrin is produced by dextrinisation: food-grade wheat starch is heated under controlled dry conditions with a trace food-grade acid catalyst, then purified, filtered, decolourised and spray dried. Roasting breaks and randomly re-forms glucosidic bonds, so alongside the ordinary alpha-(1→4) and alpha-(1→6) links of starch the finished polymer carries rearranged linkages that human amylases and brush-border enzymes hydrolyse only partially. Dextrin carries CAS 9004-53-9 and the additive number INS / E 1400, with the empirical formula (C6H10O5)n. Fibre content is determined by AOAC 2001.03, the enzymatic-gravimetric plus liquid-chromatographic method written specifically for resistant maltodextrin and resistant dextrin because part of the material does not precipitate in ethanol and is therefore missed by the older gravimetric-only methods. In its June 2018 guidance the US FDA identified resistant maltodextrin/dextrin among the isolated non-digestible carbohydrates it intends to propose adding to the regulatory definition of dietary fibre, exercising enforcement discretion in the meantime. Handling is straightforward for formulators: the powder dissolves cold to high solids, gives clear, low-viscosity, non-gelling solutions and carries almost no taste of its own, which is why it is the usual choice when fibre has to go into a clear ready-to-drink beverage or a bar without changing texture. Origin and allergen status need to be handled carefully because the raw material is wheat. The ingredient is a wheat derivative and should be declared as wheat; wheat sits among the cereals named in EU allergen labelling and is a major food allergen in the United States. The material is vegan and vegetarian and carries no milk, egg, soy, fish, crustacean or tree-nut input, and is neither bovine, porcine nor marine. Residual gluten is checked per batch by R5 ELISA, and grades tested below 20 mg/kg gluten can be quoted where a buyer needs them; the standard grade is not offered as gluten-free.
