E 960a / JECFA material is defined as >=95% of eleven glycosides (steviolbioside, rubusoside, dulcoside A, stevioside, Reb A, B, C, D, E, F, M) in any combination and ratio, and in the usual Reb A 60/80/97 grades stevioside is a MINOR component - so the stevioside CAS misdescribes the shipment. Use 91722-21-3 for the extract; if the grade sold is a single purified glycoside, use the glycoside's own CAS, e.g. rebaudioside A 58543-16-1 (PubChem CID 6918840, C44H70O23, MW 967.0). 57817-89-7 is only correct for a genuine stevioside-grade material.
Thovek supplies purified steviol glycosides extracted from the dried leaf of Stevia rebaudiana Bertoni. Leaf is extracted with water or aqueous ethanol, clarified, passed over ion-exchange resin and crystallised, and the finished powder assays not less than 95.0% total steviol glycosides on the dried basis by HPLC - the threshold set by JECFA and by the EU specification for E 960a. That 95% sum is made up of stevioside, rebaudiosides A, B, C, D, E, F and M, steviolbioside, rubusoside and dulcoside A in any combination and ratio, which is why two lots at the same assay can taste noticeably different. The glycoside profile, not the assay figure, is therefore the number to buy on. Stevioside-rich grades are the most economical but carry the familiar liquorice-bitter tail; rebaudioside A grades from 60% through 97% clean that up progressively, and Reb A blended with Reb D or Reb M gives the roundest, most sucrose-like curve for full sugar replacement. Relative sweetness is commonly quoted in the region of 200-350 times sucrose depending on profile, but sweetness equivalence is matrix-dependent and should be fixed on your own bench before a specification is locked. Steviol glycosides are non-nutritive and hold up across normal beverage and bakery processing, so they suit sugar-reduction work where the lost bulk is carried separately by erythritol, allulose or a soluble fibre. JECFA has established an ADI of 0-4 mg/kg body weight per day expressed as steviol, and FSSAI permitted steviol glycosides as a non-nutritive sweetener in India under the FSS (Food Products Standards and Food Additives) Amendment Regulations, 2015, with per-category maximum levels. The material is plant-derived, vegan and vegetarian, contains no milk, egg, soy, fish, crustacean, peanut, tree nut, sesame or gluten-bearing input, and is not of bovine, porcine or marine origin.
