Lion's mane is the fruiting body of Hericium erinaceus (Bull.) Pers., family Hericiaceae, order Russulales - the white, cascading, icicle-toothed bracket that grows on hardwood. It is cultivated indoors on blocks of hardwood sawdust supplemented with wheat bran, rice bran and soybean or corn meal, and fruited under controlled humidity, then dried and extracted. Thovek supplies the fruiting body only, harvested off the block, with the block itself discarded rather than milled into the product. That last sentence is the whole commercial argument on this ingredient. The competing article is mycelium-on-grain, in which the fungus is grown through sterilised cereal and the entire mass - fungus plus unconsumed grain - is dried and sold. Mycelium-on-grain carries a large fraction of residual cereal starch, and starch is an alpha-glucan. Any test that reports "total polysaccharide" by alcohol precipitation counts that starch, so a mycelium-on-grain powder can honestly print 30% polysaccharide while carrying very little fungal beta-glucan. Thovek declares beta-glucan enzymatically as total glucan minus alpha-glucan, on the Megazyme K-YBGL principle, and prints the alpha-glucan result on the same certificate so the buyer can see the gap. The distinction is regulatory as well as analytical: in the EU Novel Food Catalogue the fruiting body and the aqueous extract powder of H. erinaceus are listed as not novel, while dehydrated H. erinaceus mycelium powder is listed as an unauthorised novel food. For an EU-bound buyer the mycelium-on-grain article is not merely weaker material, it is material that needs pre-market authorisation before it can lawfully be placed on the market. There is a second chemistry in this mushroom that a beta-glucan specification says nothing about, and buyers routinely conflate the two. Hericenones are aromatic, benzaldehyde-type molecules found in the fruiting body; erinacines are cyathane diterpenoids found in the mycelium. Both families are alcohol-soluble, which means a hot-water extract standardised on beta-glucan does not carry either in meaningful quantity, and a supplier who quotes a hericenone or erinacine percentage on a plain hot-water extract should be asked, in writing, for the analytical method and the reference standard used - no widely accepted pharmacopoeial assay exists for either family. If the buyer wants that fraction, a dual water and ethanol extract must be specified on the purchase order and priced accordingly. On allergens, the cultivation substrate matters: wheat bran and soybean meal are ordinary block supplements, so gluten and soy cross-contact has to be controlled and verified by test rather than assumed away, and Thovek states the substrate composition and the gluten result on the certificate of analysis.

The powder is hygroscopic and will cake if the liner is breached, so nitrogen flushing and desiccant sachets are offered as standard on sea shipments.
