The reference marker is chlorogenic acid, 5-O-caffeoylquinic acid, C16H18O9, molecular weight 354.31, CAS 327-97-9, but the label figure is a family total rather than a single compound: green beans carry a set of caffeoylquinic, dicaffeoylquinic and feruloylquinic acid isomers, of which 5-CQA is the largest single contributor. Roasting destroys much of that fraction, which is why the extract is made from green, unroasted beans by hot water or water-ethanol extraction, vacuum concentration and spray drying, with no roasting step anywhere in the process. The headline commercial grades are 45% and 50% total chlorogenic acids, with 10-20% grades used where cost or beverage taste dominates and 60% available for tablet and capsule work where dose per unit matters. Specify the analytical method explicitly on your purchase specification: a UV reading taken against a single 5-CQA standard returns a higher number than an isomer-resolved HPLC assay, so "CGA 50%" means two different things depending on which was run, and a label claim built on the UV figure may not survive a third-party retest. Caffeine is the other variable - it travels with the chlorogenic acids, and reported caffeine across commercial green coffee extracts spans a very wide range, so a declared per-batch HPLC caffeine figure belongs on the CoA of any finished product carrying a caffeine statement or a caffeine-free claim.
