Ginger is the rhizome of Zingiber officinale Roscoe (Zingiberaceae), and Thovek supplies it as a dried extract of the cleaned, dried rhizome rather than as milled sonth. The rhizome is extracted in water or aqueous ethanol, concentrated and dried, then standardised on gingerols by HPLC — 5%, 10% and 20% grades — or supplied as a 4:1, 10:1 or 20:1 native water-soluble concentrate where the whole-rhizome profile is preferred to a marker figure. The powder is fine and free-flowing, yellow-brown to brown, warm and pungent in odour and taste. For reference on the raw material, the European Pharmacopoeia monograph for ginger requires a minimum of 15 mL/kg of essential oil in the dried rhizome. The pungent fraction is what buyers are paying for and it is worth understanding before the purchase order is written. Gingerols are a homologous series, quantified as the sum of 6-gingerol (CAS 23513-14-6, C17H26O4, molecular weight 294.39), 8-gingerol and 10-gingerol; on drying and heating these dehydrate to the corresponding shogaols, so a dried-rhizome extract always shows a shogaol shoulder that a fresh-juice product does not. The volatile fraction, roughly 1–3% of the rhizome and dominated by zingiberene and beta-sesquiphellandrene, carries the aroma rather than the pungency and is largely lost in a dry hydro-alcoholic extract. A commercial trap: a '20% gingerols' figure quoted by UV or by gravimetric total pungent compounds is not the same number as 5% by HPLC, and two offers cannot be compared until both state the method. Thovek quotes HPLC on the sum of 6-, 8- and 10-gingerol unless a buyer specifies otherwise, and will state shogaols separately on request. Ginger is a food spice with a long culinary and Ayurvedic history, and the extract is used across beverages, teas, gummies, tablets, capsules and seasoning systems for its pungency and characteristic warm flavour; any positioning beyond that is for the brand to substantiate in its own market. Every lot is released against HPLC assay, ICP-MS heavy metals, pesticide residues, aflatoxins and ochratoxin A and full microbiology. Material is vegan and vegetarian with no milk, egg, soy, fish, crustacean, gluten, peanut, tree nut or sesame input and no animal-derived processing aid; carrier, where flowability requires one, is non-GMO maize maltodextrin, which is gluten-free.
