What the spice trade calls cumin seed is botanically the dried fruit of Cuminum cyminum L. (Apiaceae), described by Linnaeus in 1753 and known across India as jeera. Thovek extracts the cleaned, destoned and milled fruit in water or aqueous ethanol, concentrates and spray-dries it, and supplies either a native 4:1 or 10:1 concentrate or a grade standardised on cuminaldehyde by GC. Raw material is sourced from the Gujarat and Rajasthan belts, which sit inside the world's dominant supply base: India accounts for roughly 70% of world cumin, ahead of Syria at 13%, Turkey at 5% and the UAE at 3%, and produced 856,000 tons of cumin seed in the 2020–21 fiscal year. Origin, crop year and cleaning specification are stated on every lot, because cumin is a ground-harvested umbellifer and the difference between a well-cleaned and a poorly cleaned lot shows up directly in acid-insoluble ash.
Cuminaldehyde (CAS 122-03-2, C10H12O, molecular weight 148.20, IUPAC 4-propan-2-ylbenzaldehyde) is the dominant aroma volatile and the marker Thovek assays by GC. It sits alongside p-cymene, gamma-terpinene, beta-pinene and safranal in the volatile fraction. A point that decides which grade a buyer should order: the deep, toasted cumin note that formulators usually have in mind does not come from cuminaldehyde at all but from pyrazines — 2-ethoxy-3-isopropylpyrazine, 2-methoxy-3-sec-butylpyrazine and 2-methoxy-3-methylpyrazine — which form when the seed is roasted and are simply not present in an extract of the raw seed. Add the ordinary volatility problem, that hot aqueous extraction and spray-drying strip most of the light aroma compounds, and the conclusion is straightforward. A dry cumin extract is a standardised botanical powder for capsules, tablets and churna, and is an identity-and-consistency material; if the requirement is cumin flavour in a seasoning or snack system, the correct line items are the oleoresin, the steam-distilled oil or roasted ground cumin, and Thovek quotes those separately rather than letting a powder be bought for a job it cannot do.
Two quality questions come up on every serious cumin enquiry and both are answered on the certificate. The first is mineral adulteration: sand and soil are the classic contaminants of a ground-harvested seed, and acid-insoluble ash at NMT 1.0% is the control that catches it. The second is allergen assurance. Cumin sits in the Apiaceae alongside celery and coriander, and celery is a declarable allergen under Annex II of EU Regulation 1169/2011, so botanical proximity and shared spice-facility handling both need to be addressed; in addition, peanut and almond protein ELISA is a test that cumin buyers routinely specify, and Thovek will run it and state the result on the COA. Beyond that, every lot is released against GC or HPTLC identity, ICP-MS heavy metals, pesticide residues, aflatoxins and ochratoxin A and full microbiology. Material is vegan and vegetarian with no milk, egg, soy, fish, crustacean, gluten, peanut, tree nut, sesame, mustard or celery input and no animal-derived processing aid; carrier, where flowability requires one, is non-GMO maize maltodextrin, which is gluten-free. Organic (NPOP / NOP / EU) lots ship with a transaction certificate. Cumin is a food spice with a long culinary and Ayurvedic history; composition and flavour are what Thovek describes, and any further positioning is for the brand to substantiate in its own market.
