This is a bark extract, not a ground spice and not an essential oil — three quite different articles that share the word cinnamon and are classified and priced apart. Thovek's default source is Cinnamomum cassia (L.) J.Presl (syn. C. aromaticum), dried inner bark, which is the species behind almost all commercial cinnamon polyphenol material. The compounds buyers specify are water-soluble oligomeric procyanidins built from catechin and epicatechin units and containing doubly linked type-A interflavan bonds. Standard grades are 20% or 30% total polyphenols by UV as gallic acid equivalent, with 10% type-A polymers confirmed by HPLC, plus straight 4:1, 10:1 and 20:1 native ratio extracts. Hydroalcoholic bark extracts additionally carry 1–5% cinnamaldehyde (CAS 104-55-2, C9H8O, MW 132.16); hot-water 20:1 extracts are deliberately cinnamaldehyde-lean because the volatile fraction is not what that grade is sold for. Coumarin is the commercial crux of this ingredient and we treat it as a release parameter rather than a footnote. Coumarin (CAS 91-64-5, C9H6O2) occurs naturally in cassia bark, EFSA has derived a tolerable daily intake of 0.1 mg per kg body weight per day, and reported levels in commercial cassia vary enormously — much of the spread traced to leaf and twig contamination and poor post-harvest handling rather than to the bark itself. Because coumarin is poorly water soluble, a hot-water extraction process leaves most of it behind, and our water-soluble grades test correspondingly low. Every lot is nonetheless assayed for coumarin by HPLC, we will contract to a declared ceiling as tight as NMT 10 ppm, and for buyers whose destination market or internal policy demands near-zero coumarin we source Cinnamomum verum J.Presl (syn. C. zeylanicum, Ceylon cinnamon), which is naturally very low in it. State your required limit at enquiry stage — it drives both species selection and price. The finished powder is spray-dried, reddish-brown to dark brown, free-flowing at 80 mesh, and the water-soluble grade dissolves cleanly in warm water for beverage premixes, stick packs and instant mixes; the higher-polyphenol grades compress well for tablets and fill accurately into two-piece capsules. Maltodextrin from maize or tapioca is used where a fixed assay is contracted, and carrier-free extract is available. The material is vegan and vegetarian with no animal-derived processing aid, and contains no milk, egg, soy, fish, crustacean, tree nut, peanut, sesame or gluten-containing input; it is non-GMO and not irradiated.
