Taurine

Taurine is the odd one out among the amino acids traded in bulk. It carries a sulfonic acid group where the others carry a carboxylic acid, which makes it a beta-aminosulfonic acid rather than a true amino acid, and it is never built into protein. In the body it is a major constituent of bile, where it conjugates bile acids, and it works as an organic osmolyte helping cells hold their volume. An omnivorous human diet supplies roughly 58 mg a day from fish and meat. Commercial taurine is not extracted from animals. It is made synthetically, most often by ammonolysis of isethionic acid, which is itself produced from ethylene oxide and aqueous sodium bisulfite. That route matters commercially: the finished crystal is chemically identical to the natural compound but carries no animal-origin risk, so it clears vegan, halal and kosher screening without a species declaration.
